Lone Star Meats offers natural, prime and choice beef selections with custom dry and wet age options. Aging Beef is essential for its enjoyment. At Lone Star Meats we understand the importance of proper aging, and have programs for both wet and dry aging.

Wet Aging

Wet aging is standard for all steak cuts. Whole muscles are aged to their maximum tenderness.

Dry Aging

Dry aging is a custom option for discerning chefs. During this process, the muscle loses some moisture while at the same time concentrating its flavors. Our time honored approach produces a steak of exceptional flavor and tenderness.

Beef Grades

Beef grades are an important indicator of quality. However, at Lone Star Meats they are only the starting point on our journey to secure the best beef.

Within USDA grades there are other factors which enhance the enjoyment of beef. We prefer high quality Angus genetics from small family ranches.

Windy Bar Ranch natural Texas beef, a Lone Star Meats exclusive, is born, raised and harvested in the Texas Hill Country. The ranch herd is humanely raised on a vegetarian diet with no antibiotics and no added hormones.

HeartBrand Beef/Beeman Family Ranch natural Texas wagyu beef is bred from Akaushi wagyu and Angus stock.

The Prime line is grade 6 or higher on the Japanese BMS marbling chart. The Choice line grades 4 or 5 on the Japanese BMS marbling chart. Both Beeman Family Ranch beef lines are highly marbled, with a fatty acid composition which is significantly lower in saturated fat and cholesterol.
